Ingredients

  • 2 teaspoon sweet basil seeds – soaked in 100ml water
  • 2 to 4 tablespoons of rose syrup or your choice of sweet syrup
  • Jelly cubes as needed (optional)
  • 1 large or two medium-sized mangoes or frozen mango, as needed
  • 500 ml chilled milk
  • 1 teaspoon vanilla extract optional
  • 2 to 4 scoops of mango ice cream or vanilla ice cream

Instructions

Prepare the Rose Syrup

  • I used homemade rose syrup, however, you can also use store-bought rose syrup or other red-colored syrups like Rooh Afza, strawberry, or raspberry instead of Rose syrup.

Prepare the Mango

  • You can use either fresh or frozen mangoes. Peel and chop the mango into small pieces, if you use fresh mangoes. Blend half of the mangoes into a smooth puree. You can also blend the mango with some milk if desired.

Prepare the Sweet Basil Seeds

  • Soak the sweet basil seeds in 100ml water for 30 minutes or in the fridge overnight. Strain with a tea strainer and keep aside. If you do not have sweet basil seeds, substitute it with chia seeds.

Prepare the Jelly or Jello

  • Strawberry, raspberry, or rose-flavored jelly all work well with this recipe. If you use a store-bought jelly packet, prepare it according to the package instructions. I used homemade rose syrup jelly using homemade rose syrup and gelatin. Cut the jelly into cubes as needed.

Prepare the Milk

  • You can make Falooda either with fresh cold milk or chilled milk after boiling it. Stir in vanilla before using.

Prepare the Ice cream

  • Though mango or vanilla ice cream is the preferred choice of ice cream, use any as you like.

Assemble

  • Use one or two tall serving glasses. First, add 1 or 2 of the rose syrup depending on the sweetness preferred. Next, add some jelly cubes if you are using them. Add some mango pieces and mango puree depending on the size of the glass.
  • Then add 2 tablespoons of the soaked basil seeds. Gently, pour the milk into the glass, not quite to the top. Add more chopped mangoes, if desired. Finally, top it with a scoop of ice cream.

Serve and Enjoy!!

  • Serve immediately. Falooda is best served immediately with long spoons and large straws. Give the drink a good stir before you sip.
