what is Italian Frittata
Frittata are Italian food and the word frittata roughly translates to “fried.” The base for frittata is just eggs and salt but adding parmesan cheese makes it more Italian. You can make Frittata virtually with anything, any meat, cheese and vegetables such as parsley, potatoes, zucchini, onions, salami, tuna, broccoli, or cooked pasta.
Cooking; on the stove top or in the oven
Frittata is traditionally cooked in a frying pan, and that is where the name comes from- fried. It’s not common, but you can also bake it in the oven. I find it is just easier to bake it in an oven as it ensures the bottom doesn’t burn before the egg is completely set. You will need an oven proof pan or baking dish (20 to 22cm).
However, as I mentioned before, you can also cook frittata on the stove top in a regular frying pan (check out the Spanish Omelette Recipe for more details). In that case, make sure adjust the heat and keep a close eye on it so that the bottom doesn’t burn.
You can also finish the frittata in the oven after the initial cooking on the stove top. Just cook it gently on the stove top until beginning to set on the sides, then finish cooking in a preheated oven.
Difference between Frittata and Spanish Omelette
For both Italian Frittata and Spanish Omelette, the base is eggs and salt, but adding cheese makes Frittata more Italian. You can make Frittata virtually with anything while Tortilla is usually made with eggs, salt, potatoes and onions. Potatoes and onions are fried before they are added to the egg.
Frittata is usually less thick and well-cooked, that makes it dryer than a tortilla while Tortillas should not over cooked and should still be moist in the middle. Frittata are normally served hot in wedges while Spanish Omelette is served hot or cold in slices or as bite sized tapas.

useful tips
- Once you know how to make potato frittata, you can play around with it, adding whatever you can think of, such as cooked pasta or meat, sausages, cheese. The good thing about this recipe is you can also use even leftovers.
- Peel, halve and thickly slice potatoes. Place in a microwave safe bowl and microwave on high for 5 minutes or until just tender. You can also boil the potatoes on the stove top.
- The size of the pan you use to make the omelet will determine the size and the shape of the tortilla.

How to Make Italian Potato Frittata
Equipment
- Oven proof pan/baking dish (20 to 22cm)
Ingredients
- 3 tablespoons olive oil divided
- 300 g potato boiled, sliced
- 2 cloves garlic finely chopped
- 1 medium onion finely chopped
- salt and pepper to taste
- 2 sausages cut into small pieces
- 4 eggs
- 2 tablespoons milk or water
- 1 tablespoon cheese powder
- Parsley fresh or dried (optional)
- 50 g pizza cheese
Instructions
- Preheat the oven to 180°C.
- Heat oil in a large frying pan over medium heat.
- Add the garlic and stir-fry just until fragrant, about 15 seconds.
- Add the onion and stir-fry for about 2 minutes until softened. Season to taste with salt and pepper.
- Add sliced sausages and stir-fry for about 2 minutes.
- Add the boiled potatoes and stir-fry for 3-5 minutes. The potato will absorb the flavors. Season with salt and pepper.
- Crack the eggs into a large bowl. Add salt, pepper and milk and then beat lightly. Add parmesan cheese, parsley, potatoes and cheese and then mix.
- Heat 1 tablespoon of oil in an oven-proof pan. Pour the egg mixture evenly on the pan. Bake for 20 min or until cooked through.
- Cut into wedges. Serve & Enjoy!
