Fruitcakes come in many varieties
A fruitcake (fruit cake) is a rich dense cake packed with dry fruits & candied fruits flavored with spices. Fruitcakes come in many varieties, from extremely light to rich and moist. So the recipes varied greatly in different countries depending on the available ingredients.
In some countries, fruitcakes are found only during the Christmas season, but in some countries, they are available commonly throughout the year. There are rich versions of fruit cakes, mostly iced and decorated, that are served in celebration of weddings and Christmas.
There are alcohol-free fruitcakes but most of the fruitcakes include brandy (or some kind of alcohol). Traditional fruitcakes are mostly saturated with brandy as it helps to store the cakes longer as well as improve the taste of the cake with time.
Easiest-Ever Fruit Cake (BOIL & BAKE)
Step-by-Step Recipe
Preparation time: 30 mins
Cooking time: 60 minutes
Serving: 6 to 8 slices
INSTRUMENT
22 cm Round Cake Pan
Ingredients
500 g mixed dried fruit
100 g candied peel chopped
175 g sugar
175 g butter chopped
120 ml orange juice
2 tablespoon lemon juice
3 tablespoon brandy, if using
3 eggs
175 g plain flour
1 teaspoon baking powder
1 1/2 teaspoon mixed spice
50 g semolina
Instructions
Prepare the mixed dried fruits. I used a mix of currents, raisins, sultanas, and prune.
Grease and line the pan with parchment paper. Cover the pan with aluminum foil.
Prepare all the ingredients for making the cake. Sift the flour together with spices and baking powder.
Place the mixed fruit, candied peel, sugar, butter, orange juice, and lemon juice in a large pot.
Bring to a boil. Boil off the excess water for about 15 minutes on low heat. Stir often to keep it from burning.
Take the pan off the heat.
Add brandy if using, mix until well combined, and then allow to cool.
When you are ready to make and bake the cake, preheat the oven to 170°C with a rack in the lower-center position. Add the eggs to the cooled mixture and mix until well combined with a balloon whisk or wooden spoon. Fold in the sifted flour and semolina to the cake mixture with a spatula.
Pour into the prepared pan and smooth the surface.
Bake for 170°C for 20 min, 160°C for 40 min. Adjust the time and temperature as needed. When the cake is done, a skewer inserted into the center should come out clean. Cool in the pan for about 1 hour.
Turn out onto a wire rack and remove the parchment paper.
Feed it with more brandy if you like. Poke with a skewer every inch or so, and spoon brandy into the holes. Wrap in waxed paper and store in a cool place until serving. (You can use sugar syrup or honey & lemon syrup instead of brandy. To make honey & lemon syrup, just mix honey in lemon juice. Or use marmalade or apple jam instead of honey.)

- When the cake is done, a skewer inserted into the center should come out clean.
- Cool in the pan for 1 hour, then turn out onto a wire rack and remove the paper.
- Feed it with more brandy if you like. Poke with a skewer every inch or so, and spoon brandy into the holes.
- Wrap in waxed paper and store in a cool place until serving. If you chill it in the fridge for a day it tastes better.
- Serve & Enjoy
