Caramelized Apples
This baked puffy pancake is loaded with caramelized apples spiced with cinnamon. I love caramelized apples. How about you? It’s a lovely sweet for even eating straight, or with bread, pancakes, ice cream, yogurt, or anything you like. So when I make caramelized apples, I make a lot and refrigerate the rest.
How to Make Caramelized Apple Pancake
Typically, you caramelize the apple in a cast-iron pan on the stove top and then you cook or bake the pancake in the same pan after pouring the batter over the caramelized apples. But, in this version, I made caramelized apples in advance in a separate large frying pan for convenience and then transferred into a small cast-iron pan and then poured the batter over the apples and baked.
Special Equipment
You will need a cast-iron skillet for baking this pancake. If you don’t have a cast-iron skillet, a baking dish of similar size works well too.
Preparation; How to cut apples
Peel and cut apples into quarters. And then dip them into the water for about 30 seconds to prevent apples from browning. Take out the apples and cut them into small pieces. Add vinegar or lemon juice and mix well. It will also prevent apples from browning while adding nice flavor. I used apple vinegar but you can use whatever available.
Making Batter; In a Blender or by hand
Making batter in a blender is super easy, less time no hassle. It will come out nice and smooth every time. But if you don’t have one, alternatively, you can make the batter by hand, in a large bowl with a whisk. Be sure to whisk vigorously until well combined.

How to Make Caramelized Apple Pancake
Ingredients
For caramelized apples
- 2 tablespoons butter
- 3 tablespoons brown sugar or white
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 2 apples peeled and chopped
For the batter
- 3 large eggs at room temperature
- 100 ml milk at room temperature
- 2 tablespoons yogurt at room temperature
- 60 g all-purpose flour or plain flour
- 2 tablespoons butter for baking
Instructions
Make the Caramelized Apple
- Melt the butter in a pan over medium heat.
- Add sugar and mix well until butter and sugar dissolves.
- Add the apples and cook, stirring often, for about 5 minutes or until apples are tender. Season with salt.
- Sprinkle with cinnamon and cook for another 2 or 3 minutes, frequently tossing, until the apples are coated.
- Remove from the heat. Caramelized apple is ready!
Make the Batter & Bake
- Preheat the oven to 210 degrees Celsius.
- In a blender, blend the eggs, milk, yogurt, flour, and salt until you have a smooth batter. Alternatively, make the batter in a bowl with a whisk.
- Place a skillet or oven-safe pan in the preheated oven for about 10 minutes until it is very hot.
- Remove from the oven and add the butter to the skillet/pan, swirling to coat the bottom and sides.
- Add the caramelized apples to the pan and then, pour the batter on the top of the apples.
- Bake for 18 to 20 minutes, until the pancake is puffed, the edges are golden brown and the center is set. Remove from the oven
- Serve warm or cold. Enjoy
