Garlic kangkung (water spinach) pasta in 10 minutes- super easy to make a very satisfying pasta dish. You don’t even need a recipe to get it on the table. If you don’t have kangkung, try this recipe with other leaf vegetables such as spinach or kale. You can add bacon or sausages to give an extra kick to this garlic water spinach stir fry. It also makes a great side dish, so you can also serve it with rice.
What is kankung?
Kangkung is known as Water Spinach in English. The scientific name for Kangkung is Ipomoea Aquatica. It is a leafy vegetable that typically grows in tropical and subtropical countries. It is also known in English as river spinach, water morning glory, water convolvulus, Chinese spinach, Chinese Watercress, Chinese convolvulus, swamp cabbage or kangkung or kangkong in Southeast Asia.
Water Spinach is known as kangkung/ kankun (කංකුන්) in Sri Lanka and ensai (エンサイ) or kushinsai (空芯菜) in Japan. Other names of water spinach include: ong tsoi, weng cai (Cantonese); toongsin tsai (Mandarin); kang kong (Filipino, Malaysian); kang kung, rau muong (Vietnamese); pak bung (Thai); batata acquatica, cancon (Portuguese).
How to Make Garlic Kangkung Pasta

- Boil the water for cooking pasta and then cook the pasta
- In the meantime, prepare the ingredients and then make the garlic water spinach stir-fry
- Drain and mix the pasta with garlic water spinach stir-fry

Garlic Kangkung Pasta in 10 minutes
Ingredients
- 200 g pasta of your choice
- 1 bunch of water spinach separate leaves and the stem part
- 2 tbsp oil to fry
- 3 to 4 garlic cloves sliced (adjust as desired)
- 1/4 onion sliced
- 1 red bell pepper sliced (or your choice of chili)
- 3 cherry tomato sliced (or your choice of tomato)
- Salt to taste
- 1 tbsp chili paste or chili flakes (adjust as desired)
- 1 tbsp tomato sauce
Instructions
- Cook the pasta according to the packet instructions.
- Wash and dry the water spinach and then separate leaves and the stem part by hand.
- Heat the oil in a frying pan.
- Add garlic & stir fry until fragrant
- Add onion, bell pepper and tomato and stir fry briefly.
- Add salt, chili paste, tomato sauce and mix well.
- Add all the stem parts of the water spinach & fry briefly and then add leaf part and fry until leaves wilt for about 1 minute. At that point, turn off the heat.
- Add the cooked pasta & mix everything together.
- Serve & enjoy!
