I love this spicy omelet and it’s something that I make frequently as well as it’s also my ‘go-to’ meal for busy days when I just need something easy & quick yet satisfactory. It’s absolutely easy & quick to make and a time-saving delicious omelet recipe great for breakfast or as a light meal. Omelet is the spelling used in American English. Omelette is the spelling used in British English. The word “omelette” originated in France. Then “omelette” transformed into “omelet” in the English language. So, it seems that neither spelling is wrong.
About Sri Lankan Spicy Omelet
Almost every country has its own version of the omelet (omelette) recipe. So, you will find various types of omelets around the world, and you might have tried some of them. But perhaps you’ve never heard of Sri Lankan Spicy Omelet and wondered what that’s all about.
Sri Lankan Spicy Omelet is a unique omelet with a soft center, lightly crisp edges, and with a distinctive spicy kick. It’s a kind of open-faced omelet known as just ‘omlet’ (ඔම්ලට්) or ‘biththara omlet’ (බිත්තර ඔම්ලට්) in Sri Lanka. (omlet = omelet, Biththara = eggs)
It’s typically made with eggs, onion, curry leaves, fresh green chilies, pepper, and salt. Fresh curry leaves give it a unique and distinctive flavor while fresh green chilies give it a hot & spicy kick.
Sri Lankan spicy Omelet- Useful tips
- You will only need a few simple ingredients and 10 minutes of prep to easily make this simple yet delicious omelet from scratch. Just feel free to adjust the recipe to your needs.
- It’s typically made with eggs, onion, curry leaves, fresh green chilies, pepper, and salt. Adding other ingredients such as red chilies, chili powder, and chopped tomatoes is optional.
- First, the eggs are beaten well, and then chopped onion, fresh chilies, curry leaves, and salt & black pepper are added and mixed. Then it’s cooked in a hot pan with some oil.
- I find that resting the egg mixture for about 10 minutes before cooking makes a more flavorful omelet. Resting is optional but highly recommended.
- I like an open-faced omelet with a browned bottom and lightly crisp around the edges. And I think it’s the best way to make this spicy omelet.
- However, you can make it as thin or thick as you like. You can also fold it in half or roll it up into an oval or cylindrical shape.

Eggs
In this recipe, I used 3 eggs, feel free to use eggs according to your needs.
CURRY LEAVES (KARAPINCHA)
Any Sri Lankan dish is incomplete without curry leaves. It is the secret ingredient that adds a wonderful aroma and a distinctive flavor to this spicy omelet. So, I think the aroma and flavor of curry leaves are too unique to bother to try and find a substitute for. However, finding fresh curry leaves can be a challenge in most parts of the world. So, just skip them if you don’t have them. OR you can use coriander leaves, garlic chives, or another kind of herb instead of curry leaves, but the taste will be different.
Fresh chilies
The ingredient that gives this omelet its spicy kick is fresh chilies. In this recipe, I used both green and red fresh chilies. However, you can use any fresh chilies available. Adjust the chili heat to your liking.
ONION OR SHALLOTS
You can use either onion or shallots to make this omelet. In Japan, I usually use onion as it is the one commonly available. However, in Sri Lanka, shallots (eschalots or French shallots) are widely used in cooking.
Salt & Pepper
Adjust salt & pepper to your liking.
CHILI FLAKES AND/OR CHILI POWDER
You can use either chili flakes or powder or both. Adjust the spice level to your liking.
serving Suggestion
It’s a healthy and nutritious breakfast that you can serve as a meal of its own. However, you can make them any time of the day, for brunch, lunch, or even dinner.
It goes well with bread. You can stuff it in some toast or roll it in roti or chapati. Delicious with sweet chili sauce, or ketchup. You can also serve it with rice as a side dish.
Serve it by cutting it into triangles. You can also roll it up into an oval or cylindrical shape. Or spoon in your fillings and fold them in half just like you make an American omelet or French omelet.

3 large eggs
1 small onion, finely chopped
6 to 8 curry leaves, finely chopped
1 green chili, finely chopped
1 red chili, finely chopped, optional

Beat the eggs in a large bowl.

Heat the oil in a large nonstick frying pan over medium-high heat. When hot, pour in the omelet mixture. Give it a quick swirl making sure to distribute it evenly across the pan.
Cook for a minute on medium heat till it sets. Cover the pan with a lid to speed up the process. Cook, uncovered, for a further minute until the edges are slightly crisp and the bottom is lightly browned.
