What is Sri Lankan Pineapple gateau?
Pineapple Gateau is perhaps Sri Lanka’s most-loved cake. A crowd-favorite cake for over several decades. So, it has become the favorite cake for all the special gatherings like picnics, birthdays, or any other special occasion.
It’s kind of a two-layer cake that consists of a moist sponge cake with a filling of whipped cream (or buttercream) and juicy pineapple. The cake is then covered with whipped cream, buttercream, or sometimes with chocolate icing. It’s usually decorated with pineapple, cherries, and/or ground nuts.
Sri Lankan Pineapple
Pineapple is a very common fruit in Sri Lanka. It is also used for cooking and making desserts and beverages. Sri Lanka produces some of the finest pineapples in the world which are very juicy and more flavorful.
How to make Pineapple Gateau
If you’re looking for a fancy-but-easy cake recipe, here is my version of a pineapple gateau or a fancy pineapple cake. It is very easy to make. You just need a sponge cake, whipped cream, pineapple stew, and some cherries.
Cut the sponge cake in two or three, and sandwich the cake slices with whipped cream and pineapple stew. And then cover it with nicely whipped cream and decorate it with pineapple and cherries. Or you can also decorate the cake the way you like.
Ingredients for Pineapple Gateau
Sponge cake
You will need one round sponge cake (18 cm). You can use a homemade or store-bought sponge cake. I used this homemade 4-ingredient oil sponge cake.
Pineapple
You can use either fresh pineapple or canned pineapple for making the pineapple stew and decoration. I used canned pineapple slices (about 12 slices).
Syrup
If you use canned pineapple, save the syrup for the cake. Or you can also use pineapple juice or sugar syrup.
Whipped cream
I like to use lightly sweetened homemade whipped cream but you can also use store-bought whipped cream. You can also use buttercream or your choice of cream frosting.
cherries
I used a few cherries (canned) as garnish. You can also use some red jujubes.

pineapple gateau (Step-by-step recipe)
Prep Time 20 min
Cook Time 10 min
Servings 8
Ingredients
One (18 cm) round sponge cake
12 slices pineapple, for stew & decorating
Pineapple syrup or juice, as needed
200 ml whipped cream
4 tablespoons sugar
7 cherries or red jujubes
Drain the pineapple rings, reserving the syrup.
Reserve 4 slices of pineapple for decoration and chop the rest.
Cook together with sugar for about 5 minutes until pineapples are translucent.
Let cool.
Beat cold heavy whipping cream at high speed with sugar.
Until soft peaks formed.
Put the whipped cream in a piping bag.
You can use a homemade or store-bought sponge cake. (I used this homemade 4-ingredient oil sponge cake)
Slice the sponge cake into two or three layers. I used only two slices. You can also make a 3-layer cake if you want.
Sprinkle some pineapple syrup over each of them, especially around the edges. You can also use sugar syrup or pineapple juice.
Place the first layer on a plate (topside down).
Spread a layer of whipped cream.
and arrange pineapple chunks on top.
And more whipped cream…
Cover with the second layer. Sprinkle the pineapple syrup.
Now cover the whole cake with the remaining whipped cream smoothly with a palette knife.
Decorate as you like with whipped cream, pineapple and cherries or as desired.
Chill in a refrigerator till ready to serve.

Pineapple Gateau (Pineapple Cake)
Ingredients
- One 18 cm round sponge cake
- 12 slices pineapple for stew & decorating
- Pineapple syrup or juice as needed
- 200 ml whipped cream
- 4 tablespoons sugar
- 7 cherries or red jujubes
Instructions
- Drain the pineapple rings, reserving the syrup. I used about 8 rings for the stew. Reserve three rings of pineapple for decoration and chop the rest.
- Cook together with sugar for about 5 minutes until pineapples are translucent. Let cool.
- Beat cold heavy whipping cream at high speed with sugar until soft peaks form. Put the whipped cream in a piping bag.
- You can use a homemade or store-bought sponge cake. (I used homemade 4-ingredient sponge cake)
- Slice the sponge cake into two or three layers. I used only two slices. You can also make a 3-layer cake if you want.
- Sprinkle some pineapple syrup over each of them, especially around the edges. You can also use sugar syrup or pineapple juice.
- Place the first layer on a plate (topside down).
- Spread a layer of whipped cream and arrange pineapple stew on top and add more whipped cream to fill the gaps.
- Cover with the second layer. Sprinkle the pineapple syrup, as needed.
- Now cover the whole cake with the remaining whipped cream smoothly with a palette knife.
- Decorate as you like with whipped cream, pineapple, and cherries or as desired.
- Cover and refrigerate for 3-4 hours and serve chilled.
